On a freshly cut cabbage quarter use a sharp knife and slice downward running the knife. To chop place half the head on a cutting board cut side down slice it crosswise into wide ribbons then rotate the head and cut the ribbons into cubes. For thin coleslaw-like shredded cabbage cut the halves into quarters then peel the flat surfaces into thin slivers using a Y-shaped vegetable peeler.
Taking your cabbage place it underneath the running water. Using your hands or a vegetable scrubber gently start scrubbing the cabbage. Make sure to leave no space uncleaned.
Also make sure not to miss cleaning the inside as well. Mince the cabbage into small pieces for dumplings. Place the quartered cabbage cut-side down on the cutting board.
Make very thin slices across the veins down the length of the cabbage. Then cut crosswise over the strips of cabbage to mince them. Run your head of cabbage under the kitchen tap removing any dirt or grit by lightly scrubbing with your fingers or a cleaning brush.

You should now have 4 quarters. Locate the stem for each quarter. This is called the core.
If using the cabbage for a raw preparation such as coleslaw I recommend removing any thick and fibrous outer leaves. Rinse and dry the cabbage well then cut in half through the stem. Cut those halves in half to yield quarters then cut the core out of each quarter.
Starting from the rounded top of the cabbage slice straight down the middle so the cabbage is cut in half. On one half of the cabbage make a diagonal cut on one side of the stem. Repeat on the other side of the stem.
Pull the stem out of the cabbage and discard. This is one of my go-to meals when theres nothing in the fridge but a head of cabbage and a few eggs.
